3 Ingredient Banana Pancakes

These recipes are built around commonly received fruit & vegetables, with easy but creative ideas to turn them into filling meals, snacks, and extras you can use throughout the week.
These easy banana pancakes are a great way to use up ripe bananas and make a quick, nourishing breakfast or snack. With just three ingredients, they come together fast and require minimal prep.
Ingredients
1 small ripe banana
1 medium egg
2 tablespoons wholemeal self-raising flour
Oil spray, for cooking
Method
Place the banana in a medium bowl and mash until smooth. Add the egg and whisk until well combined, then stir through the flour until a smooth batter forms. Allow the batter to rest for 5 minutes.
Lightly spray a non-stick frying pan with oil and heat over medium heat.
Spoon about 2 tablespoons of batter into the pan for each pancake, gently spreading to about 1 cm thick. Repeat to make 2–3 pancakes.
Cook for 1–2 minutes, or until the underside is golden. Flip and cook for a further 1–2 minutes, until cooked through and lightly golden.
Remove from the pan and serve warm.
Serving Ideas
Serve with fruit, yoghurt, or nut butter

Tips
Use a well-ripened banana for natural sweetness and better texture.
Keep the heat moderate to avoid burning before the pancakes are cooked through.
